Eden Solutions for Banana Ripening

Ripe bananas are often purchased in the market that have a rich yellow texture. Prior to this, Bananas are harvest in unripe green condition that is kept in cold storage. They are then being distributed in the market. Upon arriving destination, due to the slow process of natural ripening conditions, it is necessary to accelerate the ripening process to solve the distribution issues.




Spraying with ripening agent method

The traditional ripening method of banana in China is by spraying ethylene that is a ripening agent. It allows ripening and changing colors of the fruit. It takes about nine days to ripe from green to yellow. However, in this process, uneven spraying occurs commonly, which leads to the inconsistency of ripened banana. In this way, bananas are ripened differently, black spots easily formed, and prone to damage during transportation process.


Spray type ripening agent has been phased out and banned in Europe and the United States.

Temperature Regulating Ripening

Eden, Chilled Fresh Preservation offer the right storage conditions by controlling the Temperature, Humidity, Carbon Dioxide and Ethylene. The Banana Ripening Cycle is usually between 4-8 days and through pressure difference to improve the air flow (inside the control atmosphere compartment), the fruit body can be evenly ripe. The color of the fruit body is uniform, the texture is good and the sweetness is high.


- Transfer the banana from the cold room to the C.A ripening room, Internal room temperature maintain between 16℃~18℃ and humidity maintain at >90%.


- Release ethylene gas to initiate banana ripening process to begin. At this stage, the storage temperature is increased and maintained at 18 ℃ or 19 ℃, and the humidity is more than 90%. (The releasing of ethylene gas takes about 24hrs)


- After 24 hours of introducing the ethylene gas, adjustment of the concentration of carbon dioxide level and fresh air will be injected for accelerating the respiration process of the fruit. Allowing the fruit to organically transformed. (during ripening stage, carbon dioxide concentration shall not exceed 5000ppm)


- Next process, temperature to be controlled between 14℃~16℃ and to be kept for 3-4 days storage time until it is fully ripened
